Valli Unite - Not just wine

Met Ottavio Rube in person founder of this amazing cooperative and learned their philosophy at Valli Unite.
Living in the nature fully respecting it but earning all can give it to us.
At Valli Unite I found a sense of peace and freedom,and all products are grown organically from this family.
Toured first by Alessandro of the homonymous bottle of wine "Alessandrino" that we introduced after this visit,we were walked round the vineyards ,the wine cellars to then finish his tour where the grapes where first pressed and the wine when ready was finally bottled.

Over thirty years ago, three men, Ottavio, Enrico  and Cesare had the choice between upping sticks and moving out to the city to find alternative work or to regenerate their traditions and modernise the ways they farmed. They chose to remain and to continue with what they loved. Merging their vineyards, they built stalls for their farm animals so they could use organic manure to fertilise their fields and wines. These traditional methods were combined with a modern belief in organic farming practices, as part of the wider project known as ‘contraction’, involving reducing the human impact on the natural environment. Viticulture is non-invasive. Old-fashioned sickles are used to hoe the weeds, the vines are fertilised with manures from their cattle as well as green fertilisers composed of clover and weeds. Cement vats are used to ferment the wines which are then transferred to old barrels to soften and mature. In the glass, the wine is an intense ruby red, with a vinous aroma. Like other Dolcettos of other Piedmont regions, this is a wine that goes with all sorts of food, and can hold its own even with strong-tasting dishes. The Ottavio Rube Rosso is a blend of Dolcetto (80%) and Croatina (20%). It has that classic Piemontese bitter cherry-meets-chocolate-with-some-tannic-grip-for-food character.

We were invited for lunch with the whole Cooperativa on their "Mensa" and it really felt like being in a very helpful and integrating enviroment.

All products needless to say where produced in the house and meats by farmed animals prepared in the in house butchery so our lunch was simple and rustic tasting unbelievably fresh and tasty.
